Ingredients:
Unsweetened Soya Milk= 2 cups
Cow’s milk yogurt= 1 tablespoon
Green chili stems= 6 to 8 #
Method: Boil the milk and allow it to cool to room temperature. Pour the milk into a mud pot /
steel / glass container. If you are not suffering from a cow’s milk allergy, you could use the yogurt as a starter to make yogurt. Or you could add the green chili stems on the milk as a layer. That helps in setting a soya yogurt. Use a thick towel and wrap it over the pot and keep it in a warm space in your kitchen. Leave it for 6 to 8 hrs and then check to see if it has firmed
well.
Tip: If you are in a city with a warm or tropical temperature, the curd sets well and easily. If you are in a city with cold temperatures, you need to create a warm temperature around it by using a towel, or place the pot in wheat flour etc.
Nutritional benefits: Fermented food provides probiotics. Yogurt is one such source for vegans. You could make similar yogurt using oat milk too.
